ok, so i didn’t take any pictures of this delicious recipe while making it. but it’s my favorite carrot cake recipe EVER. after making it for mike’s bday last weekend, i decided i had to share the recipe, pictures or no. it’s that good. enjoy!

this has been quite a roller coaster of a week – we were lucky enough to spend a fun weekend with mike’s cousin (natalie) and her wonderful family in portland, but then we learned mid-week of the passing of my grandma’s sister – an inspirational woman who lived a full 99 years of life.
