aaaand that was another long hiatus…but i’m back! and we’re moved into our new house! it’s been a whirlwind to move in, get unpacked, clean the old place, and figure out how to spread our furniture from our old (tiny) one bedroom apartment across the new place.

i’m not quite sure how it’s already thanksgiving – i mean seriously, where did november go? i know most of you are probably gearing up for the big day, but i wanted to drop in and share this delicious squash recipe with you, as promised. we are absolutely in love with delicata squash this year, because: a) you don’t have to peel it; b) it roasts faster than most other squash; and c) i don’t feel like i’m going to lose a finger while chopping it.

busy, busy, busy – i feel like that’s my mantra lately. of course, most of the busyness is great – spending time with friends and family, enjoying being outside during the gorgeous seattle heat wave, taking a kayaking class, and, of course, working hard at my job.

i think there’s no good way to take photos of a lentil loaf. no matter how many different angles i tried, it kept looking kinda blah. but the thing is that this recipe is anything but blah. the lentil loaf is loaded with such amazing flavors, all held together by two magic ingredients: ground flax seeds that are soaked in water and slightly overcooked lentils.

there are three things I’d like to share with you today, dear readers. the first is, and you may have noticed this, I haven’t been writing about anything personal for a long time. probably since graduating in june. that’s because I spent four long months searching for a job, and the whole process sucked. and I didn’t want to bore you with all of the details, because it would have sounded like this: “well, I applied for three jobs this week, went on two informational interviews, revised my résumé five times, went to job club (thank goodness for job club!), and am still waiting for an interview.” boring, right? but I was lucky to have amazing family and friends supporting me along the way, and I was also lucky enough to get offered several jobs. I accepted a job at a great nonprofit that offers high-quality medical services to people who might not otherwise have access to primary care physicians. I’ve been working since november, but have been hesitant to write anything about my job, because it was so new and such a great fit for me (i wrote SO many policy analysis papers on access to affordable health care!) that I didn’t want to jinx anything.
