as i was beginning to come out of my post-holiday cooking hiatus, i read a blog post over at smitten kitchen (have you checked out her website? it’s fabulous!) about a barley risotto with beans and leafy greens. i had never tried to cook anything with barley, and the pictures left me absolutely drooling, so i starred the post (my version of clipping a recipe out of a newspaper), and vowed to come back to it.
hi everyone! i’m back from a trip to lovely oahu with mike’s family and ready to share more recipes with you!
full disclosure to you, internet: mike and i weren’t looking for a black bean soup recipe when we found this one, nor have we ever made black bean soup before. we just wanted to make some cornbread, and figured we had to eat something else alongside the cornbread to make it a complete meal.
i’m not quite sure why some recipes that i make get posted asap to this website, while others take longer…much longer. it’s not that the longer to get onto the site recipes are any less delish, but the carrot oat coconut cookies post just jumped right onto the page. as well as the coconut lime cinnamon rice post. wait, maybe there’s a coconut connection – perhaps my subconscious must immediately share any and all recipes immediately with you!
hello, dear readers! how was thanksgiving? mine was wonderful – beginning the wednesday night before thanksgiving and lasting right up through sunday night, mike and i were lucky enough to spend time with all four of our parents, plus their significant others, plus our sisters, plus lots of friends – we couldn’t ask for a better way to celebrate the last of fall! unfortunately, i was so busy cooking and enjoying our company on thanksgiving that i barely took any pictures – except for a few of the table and all of us sitting down to eat. i hope all of your thanksgivings were full of good friends and family as well!
but now the leftovers have been consumed, dishes are all washed and put away, stomachs are enlarged from the feasting, and taste buds are tingling for more rich and hearty food. but for the sake of detoxing a little from the pounds of butter, sugar, and carbs – what can we make that will satisfy us, get us back on track with healthy eating, and most importantly, be quick to save our feet from standing up in the kitchen for many more hours? may i suggest cheater beans?
