this quick bread contains so many of my favorite foods that i couldn’t help but make it as soon as i saw the recipe posted over on (never)homemaker‘s website.

coconut? check. cinnamon? check. flax seeds? check. maple syrup? check. plums? check. sparkling water? check.

wait, did you catch that??!? this recipe uses sparkling water to give the bread a little more rise and lightness. how awesome is that? (some of you may not know this about me, but i have a major sparkling water addiction. so much so that my sister and her bf gave us a soda stream a few years back, and we have used it almost every day since. no joke.)

before you make this, i just have two statements of caution:

1) this bread is not very sweet, which perfectly suits my breakfast taste buds. if you want a sweeter bread, try out my recipes for banana bread, pumpkin bread, and zucchini bread.

2) you are going to eat this bread ridiculously fast. it’s soooo good. you’ve been warned.

plum bread

yields one loaf of bread
borrowed from (never) homemaker

  • something to grease your loaf pan with – butter, oil, etc
  • 2c whole wheat flour
  • 1/4t salt
  • 1/2t baking soda
  • 1t ground cinnamon
  • 1/2c unsweetened coconut flakes
  • 3T flax meal
  • 1/2c warm water
  • 1/2c sparkling water/club soda
  • 3/4c maple syrup
  • 1/4c olive oil
  • 1t vanilla
  • 1c plums, peeled and chopped (about 4 medium plums)
    ______________________________
  1. turn on your oven to 350º and grease a loaf pan
  2. place the flax meal and water into a medium bowl and whisk, letting sit for two minutes
  3. meanwhile, put the whole wheat flour, salt, baking soda, cinnamon, and coconut flakes into a large bowl and whisk to combine
  4. add the sparkling water, maple syrup, olive oil, and vanilla to the flax mixture and whisk again
  5. pour the liquid ingredients into the dry ingredients and stir to combine
  6. stir the plums into the batter and pour into the greased loaf pan
  7. bake for an hour or so, testing until a toothpick comes out clean
