pea, feta, and mint hummus

i have to apologize to you: it’s taken me over two months to post this recipe, although it’s one of the best dips i’ve ever tried. a friend made this for a bbq waaaaay back in may, and i promptly asked her for the recipe (after eating a ridiculous amount of it, of course).

then i made the dip for a family bbq in june and discovered that it’s not only absolutely delicious, but it’s also incredibly quick and simple to make.

you just defrost some peas, throw them in a food processor with mint, olive oil, feta, garlic, and lemon juice, whirl them in said food processor and enjoy! yeah, this recipe is that simple. so please accept my apologies for the delayed post, and go make this dip!!

green pea, mint, and feta hummus

yields 2 cups of dip
borrowed from serious eats

  • 1 lb frozen green peas, thawed
  • 1/4c olive oil
  • 1/2c fresh mint leaves
  • 2 oz feta cheese
  • 1 garlic clove, minced
  • 2T lemon juice
  • salt and pepper, to taste
    ______________________________
  1. set aside 1/8c peas, a couple of  mint leaves, and a few crumbles of feta cheese to use as a garnish
  2. place the rest of the peas, olive oil, mint, feta, garlic, and lemon juice into a food processor
  3. process until the puree is smooth, scraping down the sides with a spatula if needed
  4. add salt and pepper to taste, then place the hummus into a bowl
  5. top with the reserved peas, mint leaves, and feta cheese
