cheese nut loaf

as a vegetarian, i always have a challenging time deciding what to make for a main course on thanksgiving, christmas, and other traditionally meat-centered holidays.

in the past, we’ve made spinach souffle or stuffed squash or butternut squash lasagna, and although they are all very delicious options, i’d always heard my fellow veg friends talk about vegetarian loaves.

so when our good friend isaac popped up for a visit a few months ago, he told us about the delicious cheese nut loaf that his family traditionally makes on thanksgiving. my ears perked up, and i decided to see if i could get the recipe from his mom, a long time vegetarian and a talented florist who created beautiful bouquets and decorations for our wedding.

liz was kind enough to send us the recipe, so we made it for thanksgiving last week and LOVED it! it’s kind of hard to describe, but the loaf reminded me of a traditional meatloaf, except lighter and tastier and, of course, vegetarian! since i’m failing on the description, i think you should all just try making it for yourselves, ok?

cheese nut loaf

yields 6-8 servings
borrowed from liz and peter k-c

  • 1T oil
  • 1 large onion, chopped finely
  • 1c walnuts, ground in a food processor
  • 1c cheddar cheese, grated
  • 1c cottage cheese
  • 1c (baby) oats
  • 4 eggs
  • 1 clove garlic, minced
  • 1t ground sage
    ______________________________
  1. preheat the oven to 350º
  2. heat the oil in a pan and saute the onion for 2-5 minutes, until soft
  3. combine the sauteed onion, walnuts, cheddar cheese, cottage cheese, oats, eggs, garlic, and sage in a large bowl, stirring well
  4. grease a loaf pan with oil or butter and press the mixture into the pan
  5. cover the loaf with foil and bake for 90-120 minutes
  6. slice and serve with vegetarian gravy and cranberry relish!
