happy st patrick’s day, everyone! to celebrate mike’s and my irish heritage, we decided to make two easy dishes with traditional irish staples: oven roasted potatoes and coleslaw.
the oven roasted potatoes are my mom’s legendary “sue’s fries” – and they’re deliciously covered in olive oil, salt, pepper, and fragrant fresh herbs. all you have to do is slice them into bite-sized wedges, toss with the above mentioned ingredients, and voila – a fabulous side dish!
the coleslaw is a new recipe out of a cookbook i’ve often overlooked. my food processor made it a snap to grate the carrots, cabbage, and onion. then, you just have to stir in some mayo, lemon juice, poppy seeds, and honey. it’s important to let it chill overnight, so the flavors mingle…but you could always steal a few bites before putting it in the fridge. :)
no matter how you slice or grate it, you just can’t go wrong with potatoes and cabbage – they’re a great combo, and these two dishes are super simple and tasty!

sue’s fries
yields 4-6 side dish servings
- 6 red potatoes, sliced as indicated below
- 2-4T olive oil
- salt and pepper to taste
- parsley, chopped
- rosemary, chopped (optional)
- dash paprika

- preheat the oven to 350º
- wash the potatoes and slice them in half, then into wedges – you can pick how big you’d like them to be, but it’s best if they’re all a similar size
- put the slices into a 9″ x 13″ glass or ceramic pan
- pour enough olive oil over the potatoes to coat them, then sprinkle with salt, pepper, parsley, rosemary, and paprika
- toss all the ingredients together and cover with aluminum foil
- place the pan into the oven and cook for 30-40 minutes, uncovering for the last 10 minutes of baking
coleslaw
yields 4-6 side dish servings
slightly adapted from simply vegetarian!
- 1 medium cabbage (either purple or green), grated
- 2 carrots, grated
- 1T grated onion
- 1/2c mayonnaise
- 2T lemon juice
- 1/2t salt
- 1/8t pepper
- 1T poppy seeds
- 1t honey

- mix all the ingredients above together
- allow to chill 2 hours or overnight

I’ve also used sweet potatoes or yams and spiced with nutmeg and cinnamon. I didn’t cover them, just put on baking sheet. They cooked quickly, especially if you make the wedges small.
